
This is a nice departure from your normal oatmeal, and an opportunity to add more veggies into your diet! Steam the butternut squash in the beginning of the week and you have an easy and nutritious breakfast to whip together on a busy morning!

Ingredients:
1/2 cup steamed butternut squash
1 flax egg
Cinnamon (to taste)
Maple syrup (to taste)
Mixed berries or banana
Walnuts
Directions:
I peeled and cut my butternut squash and put into my steamer for about 30 minutes. Alternatively you can put into a pan with a few tablespoons of water and steam in pan. You can also roast the squash. Preheat oven to 425 degrees F. Cut in half, scoop out the seeds and placing face down in an oven on a lined cooking sheet. Roast for about 1 hour until easy to scoop out.
To make the flax egg, mix 1 tablespoon of flax seed with 2.5 tablespoons of water. Mix with fork and let sit for about 3 minutes. This just adds a little thickness and more nutrition to the squash.
Once squash is fully streamed and easy to mash, mix in with flax egg and mash until smooth. Sprinkle with cinnamon and maple syrup
Top with fruit of choice and top with more maple syrup, walnuts and even almond butter would be great!
