I LOVE a simple stir fry over brown rice or quinoa. Nothing fancy, but satisfying and full of nutrients.
🌱 1 tsp of sesame oil
🌱 1 tsp rice vinegar (ok to leave out of you don’t have it on hand)
🌱1/4 cup broccoli
🌱1/4 of a red bell pepper
🌱1/4 cup of shredded carrots
🌱1/8 cup of bamboo shoots
🌱2 tablespoons of soy sauce (or soy sauce alternatives) *more to taste
🌱3/4 cup of brown rice for serving
🌱heat oil in pan and add carrots and broccoli. Sauté for about 3 minutes.
🌱add remaining ingredients and cook until preferred softness if vegetables
🌱serve over brown rice
🌱top with green onions and sesame seeds
