Cowboy Caviar

Cowboy caviar served with chips

Ingredients

  • 15 oz. can pinto beans
  • 15 oz. cans black beans
  • 1 cup organic corn (Can or frozen, thawed)
  • 2 bell peppers (Different colors), chopped
  • 1/2 small red onion, finely chopped
  • 3 Roma tomatoes, diced
  • 1/4 cup cilantro, chopped
  • 1/2-1 jalapeño, diced
  • 1/4 cup olive oil
  • 1/4 cup Apple cider vinegar
  • Juice of 1 lime
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper

Directions

Combine all ingredients and gently mix until well combined. Serve this with chips or on tacos or salsa. Enjoy!
