This is one of my favorite go to lunches since it’s so easy to whip together. The recipe below yields about 2 servings:
▪️1 can of garbanzo beans/chickpeas
▪️ 1/4 cup of hummus
▪️1/2 cup of your favorite buffalo sauce (you can add more to taste)
▪️1/2 of a green pepper (or your favorite color bell pepper), chopped
▪️1 stalk of celery, chopped
▪️1/2 of a red onion, chopped
▪️1 piece garlic, minced (or approximately a teaspoon of garlic powder would work)
▪️2 large sturdy collard green leaf
- Start by mashing chickpeas. Use a masher or back of fork. They don’t need to be perfectly mashed
- Mix in remaining ingredients, coat well with buffalo sauce
- Wrap in a collard green leaf. I added arugula and broccoli sprouts to mine, but spinach or romaine would work too if you want to add more plants.
- If you can’t find them or have a different taste, these would be great in a flour tortilla or on top of tasted bread. Honestly, this would even be good in a quesadilla as well warmed in a skillet!
