
You guys, after I learned how to actually make jackfruit taste good, I can’t stop eating it! If you haven’t tried it, it’s a must if you are plant based or plant curious!
I get jackfruit in a can from Trader Joe’s… a whole jack fruit is like the size of a small child and most likely you won’t find it in your local grocery store.
The trick I learned is to boil the jack fruit for about 30 minutes before preparing it. It gets the sweet taste out.
Ingredients
1 can of jackfruit, prepared
2 tablespoons of canned green chiles
1/4 cup of diced canned tomatoes (or fresh diced tomatoes – whatever you have on hand)
1/4 cup of decided red onion
2-3 tablespoons of taco seasoning (homemade or store bought) *if store bought, make sure there is no added sugar
2 teaspoons of garlic powder
Directions
Start by preparing jackfruit. All you’ll have to do to get started is rinse off the fruit. Try to avoid it canned in syrup for more savory recipes, as the fruit just soaks up the added sugar. Remove the hard core at the center of each piece and any seeds that may be hiding within. Then, break up the pieces that remain into small bits that resemble pulled pork.
The trick I learned is: BOIL your jackfruit. Throw it in a pot of water and boil for about 30 minutes.
Once done, drain and place in a pan with olive oil.
Sauté for a couple of minutes.
Add in the remaining ingredients and sauté for about 10 minutes. Everything is cooked, so it’s just a matter of letting the flavors absorb.
Enjoy in tortillas, lettuce wrap or salad.
Top with cilantro, salsa, jalapeño, or your favorite taco toppers.
